Salad Inspiration #salads #foodie #lunch #dinner

I am a salad junkie.  I eat them all of the time. I love versatility too  I get bored with eating the same thing over and over.  I love to change up my salads.  Here are some of the salads that I have made, or ordered to give you salad inspiration.  All of these salads can be made using whichever type of dressing you enjoy

The first salad shown is is my absolute favorite.  It is roasted beet and goat cheese salad with arugula, red onion and walnuts.  This salad is dressed in a lemon vinaigrette.

This house salad with grilled chicken makes a perfect meal.  The chicken is charcoal grilled and the salad has lettuce, tomato and red onion.  It is dressed in a red wine vinegar.  I think this would pair well with ranch dressing or Italian, too.

Romaine lettuce with tomato, red onion, cucumber and croutons tossed in a balsamic dressing.

spring mix lettuce with tomato, red onion, crouton, dry provolone and feta in a white balsamic vinaigrette.

Blanched green bean salad with red onion and tomato tossed in red wine vinaigrette

Mixed greens with thinly sliced breaded eggplant, mozzarella, red onion, cherry tomato and antipasto peppers with balsamic glaze.  This is another favorite.

Mixed vegetable salad including broccoli, sugar snap peas, baby carrot, red onion in a lemon vinaigrette.

Bow tie pasta salad with broccoli, carrot, antipasto pepper, zucchini and red onion in an Italian dressing.

For more versatility you can try pairing fruits in your salad.  I especially love spinach salad with strawberries and candied walnuts and feta cheese with a raspberry vinaigrette.

Fruits that I find work good in salads include:

grapes
apples
pears
berries
mandarin orange

Nuts that work well are
walnuts
pecans
slivered almonds

What are some of your favorite salad creations?  Share them on my Facebook wall.  I would love to try them.
