It's apple season!  Those words are music to my ears!  I love apple season.  I love apple picking, the scent of apples and everything apple in between.




I recently made some apple tarts and hand pies and wanted to share the easy recipes with you.




Apple filling recipe:

4 medium apples (I prefer granny smith)
2 tbsp. butter
1 tsp. cinnamon
1/3 cup sugar
1 tbsp. corn starch
4 tbsp. water


Start by peeling and coring all of the apples. 

Slice or dice apples. (whichever you prefer)

In a frying pan melt butter and cinnamon on low/medium heat.

Add apples, sugar and 3 tbsp. of water.

Cover and cook for 5 minutes or until apples start to soften.

In a small bowl, combine 1 tbsp. water  and corn starch.

Add to apples and continue to cook the apples until they are soft without turning into mush.

Make sure the filling is thickened.

Allow to cool



Hand pies




Purchase egg roll wrappers from the super market
(They can be found in the produce section in the refrigerated area)

Turn egg roll wrapper diagonal (like a diamond shape)

add a small amount of filling about 2 inches from bottom
(right below the widest part of the egg roll wrapper)

(You do not need a lot.  I use about a 1-2 inch high line across and leave an inch border on each side.)

Roll the wrapper upwards and tuck the sides in.  

To seal apply your finger in a bowl of room temperature water and rub it around the edges of the wrapper.

Fill a frying pan with about 1 inch of oil. 

Heat the oil before adding any hand pies.

Fry the hand pies over medium high heat.

Carefully remove the pie when it is golden brown

Roll the pie in cinnamon sugar immediately.

Tarts




(See apple pie filling recipe above)

Purchase pre-made pie tarts from the supermarket.
(Check the pudding/jello section)

Fill each tart with apple pie filling.

Bake tart according to directions on package.

Serve with vanilla ice cream.

Enjoy!

    1. Yes, that is a great idea for individual desserts. You can heat them up and serve the with a scoop of vanilla ice cream on top!
