This berry cake is so simple and delicious. It can be served as a breakfast addition, afternoon tea side or dessert.
1 cup of all purpose flour
1/2 cup sugar
1 tsp baking soda
1/2 tsp salt
1 stick of room temperature butter
2 tsp vanilla
1 container of mixed berries
2 tbsp orange zest
1/4 orange for after baking
Combine dry ingredients and mix
add butter, vanilla, orange zest and eggs. Combine until blended.
This is a thick batter, so don't be alarmed if it appears thick.
In a greased 8 or 9 inch pan
Add batter and smooth out to cover the entire bottom of the pan.
Coat berries in a tbsp of flour
pour over cake mix or place them in a design if you would like.
Bake at 350 degrees for 45 minutes.
Remove from oven and squeeze 1/4 of an orange over the top of the cake.
1 small container of room temperature marscapone
1 cup heavy whipping cream
1 tsp vanilla
2 tbsp honey
1 tbsp orange zest
Whip heavy whipping cream, vanilla, and honey
fold in marscapone and orange zest
Use as a topping with cake.
