Cabbage Soup for a Cold Winter Day

I love soup.  I can eat it every meal.  One of my favorite soups to make is Cabbage soup.  Since we are in the midst of a cold spell, I figured this would be a great day to repost this recipe.  It is very simple, filling and delicious.




Ingredients

1/2 head cabbage cut into 1 inch cube size chunks
1 can of white beans (cannellini) drained and rinsed -  (or fresh beans)
1 onion chopped
2 cloves garlic minced
1 tbsp butter
1 tbsp olive oil
1 can of diced or stewed tomatoes with basil, garlic and onion
1 small can of tomato sauce 
chicken or beef broth (1 carton)
salt 
pepper
1 tsp oregano
and any spices you like
I throw in a pinch of  each thyme. garlic salt, onion powder
baby carrots 
(any veggies you like)

Start by adding oil and garlic to a large pot
Sautee onion and garlic until translucent
Add cabbage, mix and cover for 5 minutes
Add white beans, mix and cover for another minute or 2

Add diced or stewed tomatoes, broth and tomato sauce.
season with salt, pepper (to taste) , oregano and other spices
Feel free to add water if you think it needs it.

If you want a little bite to the soup you can add a little red pepper flakes.

Cover and cook for an hour (add any veggies you would like after the first 1/2 hour of cooking)

    1. Yes and you can change it up as you like by adding ground beef or different beans or veggies to it.

  3. Mmm!!! I totally could too!! This one reminds me of my childhood!! My Mom made something similar often!! I wasn't a fan as a child but totally can appreciate it as an adult ;)

  5. Sounds good. I just need a few adjustments to make it vegetarian. How many cups is one carton? I am guessing 4, but am not sure.

  7. This sounds so yummy. I love cabbage and hadn't thought to make a more hearty soup w/ it using beans. I've made a vegetable soup w/ it for a diet before and it was actually delicious.
