Delicious Balsamic Chicken Salad



Have you ever had balsamic chicken salad?  It is so delicious and makes a great lunch dish.  It is so simple to make and trust me you will love it!  This recipe was made using Tuscanini Balsamic Glaze.  It is a delicious fine quality balsamic glaze and adds amazing flavor to my Balsamic Chicken Salad recipe.  For those who are not familiar with balsamic glaze, it is similar to balsamic vinegar but thicker.  It is perfect for salads, chicken, as a topping for dishes and even can be used as a garnish.



Ingredients
1 lb. boneless chicken cut into strips
1/2 cup of oil
1/2 cup of milk
2 eggs beaten
1 cup flour
3 cups of Italian seasoned bread crumbs
Tuscanini Balsamic Glaze 
1 red pepper chopped
1 green pepper chopped
1 yellow pepper chopped
1 red onion chopped
1-2 cloves of garlic peeled and pressed
10 cherry tomatoes halved
salt and pepper
Fresh basil (rolled and cut into thin strips)

Directions
Season raw chicken with salt and pepper

Heat 1 cup of oil in a large frying pan

Place eggs and milk in a bowl and beat
Add chicken strips and let sit

In 2 separate flat dishes, pour flour in one and bread crumbs in other

Dredge chicken in flour and shake off excess

Dip chicken in egg and milk mixture

Place chicken in bread crumbs and coat thoroughly

Place chicken in hot frying pan and fry until chicken is browned.
(You can fry several pieces of chicken at a time but don't overcrowd pan)

Allow chicken to cool and cut into chunks or strips

In a large bowl add chicken, chopped onion, peppers, garlic and tomatoes

Add balsamic glaze and mix until thoroughly coated.  Season with salt and pepper

Add basil
