CRISPY PANCETTA WITH GOAT CHEESE AND FIGS

INGREDIENTS

  • 6 whole ripe figs, rinsed, dried, and sliced
  • 4oz of plain goat cheese
  • 12 thin slices of pancetta cut in half lengthwise
  • 12 arugula leaves
  • 12 Original Black Pepper Crackers

PREPARATION

Preheat oven to 400 degrees.

Place pancetta in a single layer on a baking sheet.

Bake pancetta until crisp: this can range from 6-15 minutes dependent on the thickness of the slices and the heat of the oven. We recommend keeping a close eye on them. 

Drain pancetta crisps on a paper towel and cool (about 10 minutes).

On our Black Pepper Crackers, place the crispy pancetta, spread the goat cheese, and top with the fig slices and one arugula leaf.



BAKED BRIE AND BACON JAM

INGREDIENTS

  • ½ white onion, chopped
  • 1 tbsp oil
  • 3 pieces of thick cut bacon, chopped
  • 1 tbsp brown sugar
  • ¼ cup maple syrup
  • 2 tbsp apple cider vinegar
  • ¼ tsp black pepper
  • ½ tsp chili powder
  • Fresh thyme springs
  • 4 oz of brie
  • Original Mary’s Gone Crackers
 

PREPARATION

In a pan over medium heat, add the oil and sauté the onions for 3-4 minutes until translucent. Add chopped bacon and cook for another 5 minutes. Before adding brown sugar, maple syrup, vinegar, black pepper and chili powder, drain out some of the bacon fat. Cook the ingredients over medium to low heat, watching carefully, for 20-25 minutes until a sticky and jammy consistency forms.

Add a small slice of brie on top of each cracker.

Place in the oven and broil for 2-3 minutes, watching carefully again, until melted.

Spoon 1 teaspoon of bacon onion jam on top of the brie, then garnish with fresh thyme.



FIESTA AVOCADO HUMMUS

INGREDIENTS

  • 1 can garbanzo beans, drained & rinsed
  • 2 medium avocados, cored & peeled
  • 2 tablespoons olive oil
  • 3 cloves of garlic, peeled
  • 2 tablespoons tahini
  • ¼ cup lime juice, or the juice of 2 limes, depending on size
  • 1 teaspoon onion powder
  • Pinch (or two) of ground cumin (depending on personal tastes)
  • Salt and pepper to taste
  • 1 tablespoon cilantro, chopped for garnish (if available)
  • 1 teaspoon red pepper flakes for garnish

PREPARATION

Place garbanzo beans, oil, tahini and lime juice in a food processor and pulse until smooth.

Season and add avocado, onion powder, and cumin; pulse again until smooth.

Top with a drizzle of oil, cilantro and/or chili flakes to serve.
