Brownie pops are a fun spin on the classic cake pop. This sugar free version has a seriously delicious fudgy texture, smothered in melted chocolate and garnished with your favorite toppings. This is a great recipe to make with the kids and will hold well in the fridge for up to a week.

Ingredients

    Brownies

  • 1 package TruEats Brownie Mix

  • 2 Eggs

  • ½ cup Vegetable Oil

  • ½ cup Water

  • 1 Tbsp Vanilla Extract

  • For the brownie pops

  • 2Tbsp milk (or plant based milk of choice)

  • 1 package Cake Pop sticks *(see note below)

  • ⅛ cup Unsweetened Dark Chocolate Chips

  • Chocolate Coating

  • 2 cups Unsweetened Dark Chocolate Chips

  • 2 tsp Coconut Oil, melted

  • Topping Ideas

  • Mini Chocolate Chips

  • Toasted Coconut Flakes

  • Chopped Nuts

  • Assorted Dried Fruits, chopped

  • Orange Zest (if you bake it at 200℉ for 10 minutes, it dries and becomes easy to sprinkle)

Directions

  1. Preheat the oven to 350˚F (if using a dark colored baking pan, set the oven to 325˚F). 

  2. Prepare an 8X8’’ or 9X9’’ baking pan by lining it with parchment paper along the bottom and sides of the pan for easy removal. Spray the pan with cooking spray.

  3. Whisk together the Brownie Mix, Eggs, Oil, Water and Vanilla in a large bowl.

  4. Pour the batter into the pan and bake for 25-30 minutes or until a toothpick inserted comes out clean and the brownies are firm to the touch.

  5. Cool the mixture for 20 minutes and remove it from the pan by lifting up on the parchment paper. Trim the edges of the brownies and reserve for another use (they are great on top of sugar free ice cream)

  6. Crumble the baked brownies in a large bowl with a fork until it resembles coarse crumbs.

  7. Add Milk to the crumbled brownies and mix evenly with a fork.

  8. Scoop the mixture with a portion scoop and roll in your hands to create the brownie pops. Place the brownie pops on a parchment lined tray.

  9. Melt the ⅛ cup Chocolate Chips in the microwave in 30 second increments until just melted (stirring in between)

  10. Dip each Cake Pop Stick into the chocolate and insert it into the middle of a brownie pop.

  11. Freeze the brownie pops for 2 hours. Meanwhile, prep the brownie pop toppings.

  12. When the brownie pops are thoroughly chilled, melt the 2 cups of Chocolate Chips and Coconut Oil in the microwave for 30 second intervals until just melted (stirring in between)

  13. Dip the brownie pops in the chocolate until evenly coated. Allow the excess chocolate to drip off of the brownie pops and place them back onto the parchment lined tray.

  14. Sprinkle the brownie pops with your favorite toppings before the chocolate sets. (try doing one brownie pop at a time. The frozen brownie pops set the chocolate quickly)

  15. Chill the brownie pops in the fridge for 30 minutes and then serve!

Recipe Note

Note: For vegan recipe, use egg replacer and plant based milk.

Note: Cake pop sticks can be found at your local grocery store in the baking aisle. If you would rather not use them, you can also dip the frozen brownie pops in the chocolate using a fork. Additionally, you can use candy cane sticks or cinnamon sticks during the holidays or use small forks inserted into the brownie pops instead.
