Healthy Lunch Ideas for the Office

Working in an office, I often use to find myself going out to lunch and not only making unhealthy choices when it came to the foods I ate, based on what was available around the area, but also spending a ridiculous amount of money.  



Over time I decided that it was smarter for me to bring my own lunches to the office and make healthy lunches that were good for me and saved me money.  I would bring my lunch in a pretty lunch bag, like this one from Seekers Cove


It has a stylish and professional look to it, has lots of room to bring  everything I need,  has a lightweight, durable material, and is good for the environment, because it is reusable.  It even has interior elastic straps to hold things in place and a double insulated body to keep things cold or hot.

Here are five healthy lunch ideas for the office:

Avocado Salad


Ingredients

  • 1 ripe avocado pitted and peeled
  • 2 tablespoons fat free sour cream
  • 1 tablespoon lime juice, fresh
  • 2 tablespoons cilantro minced, fresh
  • 2 tablespoons minced red onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper and paprika to taste
  • Serve on lettuce leaves or in a wrap.  Add grilled chicken or boiled egg for extra protein

Hummus 


Ingredients

  • 3 Tbsp tahini
  • 2 Tbsp Extra Virgin olive oil
  • 1 (15 oz) can garbanzo beans/ chick peas
  • 2 1/2 Tbsp fresh lemon juice
  • 1 medium garlic clove
  • 1/4 tsp cumin
  • Salt to taste and paprika to taste

Hummus is great to eat with fresh cut veggies and pita bread.  

Cottage Cheese


Ingredients

  • 1 small container of cottage cheese
  • 1 melon cut into chunks
  • 3 fresh strawberries halved
  • fresh pineapple chunked
  • any other fruit you enjoy
Place a cup of cottage cheese in the middle of a plate, surround with your favorite fruits and berries.

Cauliflower Rice Ideas



Cauliflower rice is so delicious and convenient.  You can purchase it frozen and even flavored.  For a quick lunch idea, use it in a burrito recipe in place of rice.  You can even make a bowl, like the one pictured above.  Just add your favorite spices, some beans, nuts and chopped veggies for a complete, healthy meal.  The recipe ideas are endless.
