My Thoughts
I love chicken but had  never been the greatest chicken cook.  I always tended to over cook it.  The Chicken Bible is truly a blessing to have in my home.  It’s teaching me proper cooking techniques, recipes, knowledge of chicken parts and so much more.  I’ve always felt that chicken was the most versatile meat, and with all of the new recipes that I’m learning from this book, I love it even more!

Herbed Roasted Chicken
This fresh and flavorful recipe gets its vibrant flavor from our buttery herb paste made with scallions, tarragon, thyme, and spices. We butterflied the chicken and then spread the paste underneath the skin to achieve a crispy exterior. To ensure that the chicken would keep its fresh herb flavor, we slathered the paste over the top of the chicken halfway through cooking.

Turkey Cutlets with Barley and Swiss Chard
For a hearty weeknight meal (and a break from chicken), we recommend quick-cooking turkey cutlets. Because turkey cutlets cook quickly, we prepared our barley and Swiss chard first. We cooked the barley with onion and garlic and then added in the Swiss chard. To give the cutlets a bright, citrusy flavor that wasn’t too overpowering, we caramelized lemon and squeezed the mixture over the top of the cooked chicken.

Cast Iron Easier Fried Chicken
You’ll find plenty of fried chicken recipes in our cookbook, but this one is your new go-to if you’re looking for a fuss-free cast-iron version. We brined the chicken in buttermilk for about 30 minutes to prevent it from drying out while cooking. To achieve a perfectly crispy, crunchy coating, we whisked our dry ingredients and spices with buttermilk and dredged the chicken pieces in the mixture before shallow-frying them in our pan. We then cooked the chicken in the oven for about 12 minutes.
